Sey's emphasis on buying micro-lots--or even whole harvests from single farmers earned it the praise of discerning New York City coffee aficionados. In the past, Sey bought a six-bag micro lot of Danilo Dones Sitio Catucai from Brazil's Espirito Santa region. The beans were picked when they were ripe and floated to remove any defects. They were then dried on the farm following a 36-hour dry fermentation. The result is a blend with hints of berry lemongrass, and melon.

Sey's commitment to holistically improving the wellbeing of staff, growers and customers extends beyond the store. It utilizes biodegradable disposables as well as composts, keeping waste out of garbage and converting it into agents that lower harmful greenhouse gases and enrich the soil. La Carba follows a strict process to find their perfect beans. They scour through hundreds of varieties each year in order to select the beans that best fit their ideals. I tried the Sumatran Coffee and it was incredibly rich and velvety with a velvety taste. Dark chocolate was evident in the aroma. And as you sipped the coffee, you could detect subtle citrus fruit flavours.
